Glorified Rice Salad

  • 2 c Cooked Rice (Med. Grain)
  • 1-1/4 c Cold Water
  • 1 c Sugar
  • 2 tbsp Cornstarch
  • 2 Eggs (Beaten)
  • 5 tbsp Real Lemon Juice
  • 1/2 tsp Vanilla
  • 1-2 tbsp Butter
  • Mini Marshmallows
  • Crushed Pineapple (Drained)
  • 2 c Whipped Cream
  1. Cook water, sugar, cornstarch, eggs, lemon juice and vanilla until thick. Watch so it doesn’t scorch. Remove from stove to cool. Add butter. When cool, add cool rice, marshmallows, pineapples and whipped cream. Mix, chill and serve.
