Greek Salad
Salads/Soups/Sandwiches
- 8 c Torn Romaine Lettuce
- 1 Small Red Onion
- 1 Medium Tomato or 5-6 Smaller Roma Tomatoes
DRESSING
- 1/4 c Olive Oil
- 1 tbsp Red Wine Vinegar
- 2 tsp Lemon Juice
- 1 tbsp Fresh Oregano (Finely Snipped)
- 1/2 tsp Minced Garlic
- 1/2 tsp Salt
- 1/8 tsp Coarsely Ground Pepper
GARNISH
- 1/2 c Olives (Calamata)
- 1 (4 oz) pkg Crumbled Feta Cheese
- Prepare Romaine lettuce, red onion and tomato, toss and chill. Combine all dressing ingredients, whisk and pour over lettuce, mix and toss. Garnish with olives and Feta cheese.
